Spice Cake

It seems my spice cake was well received at Saturday’s #Sweetspot11 party and I’ve had a few requests for the recipe. Here it is! Please bear with me, it’s been passed down to me via my mother, and she was pretty terse with the details.

Spice Cake
In a large bowl:

Cream:
2/3 cup butter
1 3/4 cups sugar

Add and mix:
3 eggs
1 tsp vanilla

In a second bowl, mix:
2 1/4 cups flour
3 tsp baking powder
1 tsp salt
2 tsp cinnamon
1 1/4 tsp ginger
1 tsp nutmeg
1/2 tsp alspice
1/3 tsp cloves

Add the dry mixture to the wet with 1 1/3 cups milk. Alternate dry and milk, starting with dry, ending with dry.

Pour into a well greased and floured Bundt pan. Cook at 350F for 35-40 minutes. Make sure the centre of the cake is cooked before removing from the oven.

Icing

2 tbsp hot water
1/2 tsp instant coffee

OR

2 tbsp espresso

1 1/2 tbsp melted butter
Icing sugar — enough to make it creamy, but not dry

Drizzle icing over cake while still hot.
